Sunshine Soup - Great for Postpartum
1/2 medium butternut squash; peeled, gutted of seeds, chopped
3 medium/small sweet potatoes; peeled, chopped
4 large carrots; ends removed, cut into quarters
3 cloves garlic
4 cups vegetable or chicken broth
1 tablespoon lemon juice
1 cup roasted, unsalted cashews
2 tsp Turmeric
2 tsp salt (decrease to 1 tsp if using salted cashews)
Place all items in Instant Pot, press “soup,” or set to high for 30 minutes. Manually release pressure on Instant Pot after done cooking. Purée soup in blender (it may take a few batches to purée entire pot of soup in blender). Serve hot.
